With the assistance of Heinz von Holzen, master-chef and owner of Bumbu Bali Restaurant and Cooking School which won the Best Restaurant in Indonesia in 1999, 2000 and 2002, we have brought the Balinese cuisine to food lovers in Cairns – the only Balinese Restaurant in Far North Queensland. Heinz von Holzen is a respected author of the Balinese cuisine with his latest of 3 books “Bali Unveiled – The Secrets of Balinese Cuisine” that will be launched in 2004 Our 2 chefs – Chef Komang & Chef Made have brought their talents to our little piece of paradise here in Tropical North Queensland Bayleaf Balinese Restaurant owner Klaus Ullrich has had vast experience in the restaurant industry. As an Executive Pastry Chef from Austria (having won numerous awards as well!), he has had major stints with prestigious hotels like The Observatory Hotel - Sydney, Sheraton Laguna & Nusa Dua - Bali as well as in Switzerland, Austria, Germany & South Africa. He has also owned and opened his own successful restaurant (bluefish restaurant & bar) in Darling Harbour , Sydney . Klaus's love of Bali and the cuisine is obvious, having spent 2 years with Sheraton Nusa Dua and this cuisine change is a culmination of his efforts to showcase this exotic taste to local Australians and visitors alike.
